Lavender (Lavandula angustifolia): A Mediterranean Herb With Ancient Roots
Lavender belongs to the Lamiaceae family, the same botanical family as mint, and is native to the Mediterranean region. The flowers are the plant part used, and the species has one of the longest documented histories of use of any cultivated herb. In ancient Greece it was known as Nardus, named after the Syrian city of Naarda. It appears in the Song of Solomon and was used in the preparation of holy essence in the biblical Temple. That depth of cultural history is unusual for a herb still in everyday use today.
Fragrant Flowers in the Cup and the Kitchen
The dried flowers steep easily in hot water to make a floral tea. Lavandula angustifolia is noted as the most pleasing lavender species for culinary use, both for its aroma and taste, which makes it the natural choice when lavender appears in salad dressings, sauces, and beverages. Beyond the kitchen, the flowers are widely used in cosmetics and fragrance. The aroma is the defining quality here: softly floral with a subtly sweet edge, and noticeably more refined than the sharper character of other lavender species. If you have only used lavender as a background note in a blend, the dried flowers on their own are worth trying.
